Tasting Notes

This Cabernet Sauvignon pours a deep garnet color with inviting aromas of black currant, ripe blackberry, and a hint of cedar. On the palate, it reveals rich flavors of dark plum, cassis, and a touch of dark chocolate, balanced by notes of toasted oak and espresso. The mouthfeel is velvety and full-bodied, with well-integrated tannins that provide structure and a smooth texture. A lively acidity adds balance, leading to a long, elegant finish with lingering fruit and spice.

Food Pairing Suggestions

This wine pairs beautifully with grilled ribeye, roasted lamb, braised short ribs, and herb-crusted pork tenderloin. It also complements rich mushroom dishes, hearty pastas, and aged cheeses such as cheddar, gouda, or blue cheese. For a sweeter pairing, try it with dark chocolate desserts or a flourless chocolate cake, making it a versatile choice for both savory meals and indulgent treats.

Vineyard

The 2023 Prescription Cabernet Sauvignon is grown in the prestigious Alexander Valley, one of Sonoma’s most celebrated regions for Bordeaux varietals. This inland AVA benefits from warm days that ripen Cabernet to full intensity, while coastal-influenced evenings help maintain structure and balance. The valley’s well-drained gravel and alluvial soils contribute to the wine’s depth and concentration, delivering a bold, fruit-driven Cabernet with polished tannins and a long, satisfying finish.

Production Method

Crafted from 100% Cabernet Sauvignon grapes sourced from the prestigious Alexander Valley. The region’s gravelly, well-drained soils provide the Cabernet grapes with structured tannins and concentrated fruit character, while its diverse microclimates enhance the wine’s complexity and depth. After fermentation, the wine is aged for 16 months in a combination of new and used French and American oak, adding layers of spice, vanilla, and elegance to the finished wine.
