BBQ Portobello Mushroom Burgers with Cabernet Caramelized Onions

Ingredients

4 large portobello mushroom caps, stems removed

2 tbsp olive oil

2 tbsp balsamic vinegar

Salt & pepper

For the Onions:

2 large yellow onions, thinly sliced

1 tbsp butter

1 tbsp olive oil

1/4 cup Prescription Cabernet Sauvignon

1 tsp brown sugar

For Assembly:

4 brioche buns, toasted

Sliced sharp cheddar (optional)

Arugula or baby greens

Garlic aioli or Dijon mustard

Preparation

  1. Marinate mushrooms in olive oil, balsamic, salt & pepper for 20 mins.
  2. In a skillet, heat butter and oil. Add onions and cook low and slow for 25-30 mins. Add wine and sugar, stir until syrupy.
  3. Grill mushrooms 4-5 mins per side until tender and charred.
  4. Build burgers with mushrooms, onions, cheese (if using), and your favorite toppings.
